I'm not familiar with the ICE course, but if you're interested in Instrumentation and Control Engineering, you should definitely pursue it. Just ensure that NITT has a solid curriculum for it.

As for Mechanical Engineering at MNNIT, it's a good option. Core branches tend to be strong. However, keep in mind that PSUs are not recruiting from NITs anymore. So, if placements are a concern, you'll need to prepare for GATE.
