Should I go with IIM Kashipur analytics or IIM Sambalpurs core program provided I have little to no inclination towards analytics and coding and I come from a non engineering background?

IIM Sambalpur's core program could be a better choice because it's a general MBA, and the placements are pretty impressive too. Plus, you'll have the flexibility to choose your specialization later on.

From what I've seen, analytics can be pretty math-heavy, and I've watched friends struggle, especially those who are new to it. So, since you're unsure about diving into analytics, I'd suggest going with the general MBA at IIM Sambalpur.
