Both IIT Kanpur and IIT Bombay are excellent engineering institutes and their worth and credibility cannot be compared. So ik your case, the ‘better’ institute is the one that will fetch you better opportunities and open more doors for jobs. But here are some things to consider

If you want to go for higher studies in Statistics after completing your Masters, then the best choice is IIT Kanpur. Their coursework revolves around core statistics concepts and will give you hands-on experience with the same. You will have to work harder than usual to maintain good grades in these cases
But if your only agenda is to start working as soon as possible, IIT Bombay is the place for you. It gives you enough time to explore beyond academics making you more attractive in the job market. The academic workload is considerably less in comparison to IIT Kanpur.

So, it all depends on what your job inclinations are!
