Between KJ Somaiya and VJTI, the latter is definitely better. Whether or not you should take a year drop that depends on you and how important is this year to you.
Comparison:
If you compare KJ Somaiya and VJTI, in terms of placement and higher education you will see that the best students from KJ Somaiya do get similar opportunities as VJTI students. One of my friends attended VJTI and got placed in a company that was one of the best to visit KJ Somaiya too. So, he has 4-6 colleagues from KJ Somaiya.
As long as brand value goes, after 5 years of the compilation of your course, no one will care where are you from VJTI or KJ Somaiya.
People will care if you are from IIT though because IIT brand-name sticks.
A word of advice, dropping a year to join VJTI may not be worth it. If you are going to drop a year, try to get into an IIT or IIIT.

Quite good and honestly, most non-Maharastra students tend to not take admissions beyond these 5–6 colleges. You may have to score in the range of 98%ile to 99.9 to get into some of these colleges.
There are fair chances of Non - Maharashtra students of getting the above-mentioned colleges under All India Category seats as per DTE Maharashtra for MS and PGDM programs. In colleges such as SIMSREE & PUMBA, more seats are reserved for students from Maharashtra as compared to seats for students from the All India category. You can refer to the DTE Maharashtra website for more information.
Both of these institutions would definitely be on the list if you are planning your engineering from one of the many colleges in Mumbai.

The cut-off score for KJ Somaiya Institute of Management Studies and Research (KJSIMSR) varies each year and depends on various factors such as the difficulty level of the NMAT exam, the number of test takers, and the number of seats available. Apart from NMAT the institute also considers CAT/CMAT/XAT/GMAT scores as well.
In recent years, the cut-off for KJ Somaiya has been around 95 percentiles, in percentile terms which in score terms is around 210-215 for the NMAT exam. So, with a score of 213, you have a chance of getting a call from KJ Somaiya, but it ultimately depends on the number of applicants who have scored higher than you.
It's also important to note that the final selection process at KJ Somaiya includes a group discussion (GD) and personal interview (PI), in addition to the NMAT score. So, your performance in these stages will also play a significant role in the final selection decision.
First of all, congratulations on your acceptances to these colleges. Great Lakes would be the best option for you if you’re interested in a one-year MBA program, especially in the IT domain, given the current COVID situation. If you’re interested in rural management instead, IIRMA is considered the best program for that specialization.
I would advise against choosing IIT-BHU and recommend KJ Somaiya only if you’re specifically interested in pursuing an MBA in HCM. TAPMI would be the best choice for someone looking for a general MBA program without a specific interest in any of the specialized areas mentioned above.

Every institute has the freedom to set its own fees for the various courses it offers in accordance with the rules of the state/country in which it is located. It cannot be labeled exploitation as long as it is within the specified limitations.
Remember that it is a deemed private university (Somaiya Vidyavihar University) and receives no government money. There could be several reasons why they arrived at the figure of 4 lakhs for 1st year B. Tech, as you said. You are under no obligation to participate in the course for whatever reasons you believe are valid.
What you make of it determines its worth. If you do not believe it is worthwhile, you are free to join any other worthy institute of your choice.
There are no such major differences between CS and IT departments as the course structure is very similar to both the departments except for a few subjects. Almost all companies accept students from both the departments for interviews.
But between these two colleges, you should choose KJ Somaiya College of Engineering as it will be a better choice and here are a few reasons.

So, choosing KJ Somaiya can be a very good option and the selection of the department completely depends on your interests and your requirements from the course.
The decision to pursue an MBA program from a private business school will depend on your responsibilities, family background, and financial strength. Apart from these, the factor that should be the most important to a poor student should be ROI.
If you consider the average fees, the course duration, and the average package during placements, you can calculate the amount of time it will probably take to pay off your student loans. You can extend this method of evaluation to the various colleges mentioned in your question, and then pick the one with not only the best ROI, but also the least amount of time it takes for repayment.
