If you are really interested in Instrumentation, only then you should join this department. Otherwise, join some other branch in NIT T so that you are able to learn something.
NIT Trichy placements are good for Instrumentation & Control Engineering. Microsoft, P&G, Reliance Industries, etc. are some of the major recruiters that take part in the placement drive. The highest CTC offered to the students of this branch is around INR 40-50 LPA. Around 65-70% of students also get internship opportunities.
ICE at NIT Jalandhar is one of the most reputed branches in the terms of placements as well as in the aspect of GATE. I have a friend in the 2018 ICE batch at NIT Jalandhar. In 2018, the GATE IN topper was from the ICE branch at NIT Jalandhar. Also, nine students of ICE were Under 100 in GATE 2018.

The course curriculum specifies that in the summer after completing your first year of M.Tech, you have to do an internship either in the industry or academia. You will have 3 options.

You will have internships at the end of the first year. In the second year, you will have placements, dissertation, academics. So, the only time left to do an additional internship is the winter break after the first sem. Unless you are extremely enthusiastic, I will suggest that you take a break during this period. Because after the break you will be swamped with coursework for 1.5 years.
The average package for the Instrumentation and Control Engineering (ICE) branch at NIT Trichy during the 2022 placement was around 7-8 lakhs per annum. Thapar University in all aspects is a lot better than JIIT. But I am not quite aware of the EIC branch. You can interact with ex-students of the institute online, to get a better idea about the course. If you think it will be a better choice, go for it.

Thapar University will be a much better choice than JIIT, as it is popular among students and professionals as well. Any branch at Thapar will prove to be more valuable than CSE at JIIT Noida.
CSE in Manipal would be a better choice for a secure future. Some reasons that support the aforementioned statements are listed below.
Job opportunities – Computer Science and Engineering is one of the trending fields that has ample job opportunities. Even if you opt for instrumentation, eventually you will end up in a software job.
Tagline – The tagline of the institute matters in your abroad studies or the interviews. Since Manipal has a strong alumni base and is one of the oldest and most reputed institutes in India, the credibility of this institute helps to clear interviews with core companies.
Placement – Manipal has had a better placement record in recent years than NIT Silchar.
Environment – The authorities of Manipal ensure a resourceful learning environment for every student.
Faculty – CSE has more highly experienced and qualified faculties at Manipal than NIT
Hence, you can go with the option of CSE in Manipal.
