B.Tech in AI(Artificial Intelligence)
This course is somewhat similar to CSE except that you’ll be mainly studying courses on machine learning and AI. Students of this program have to be proficient in Maths, ML, DL, etc. These courses are compulsory and you will be assigned projects on the same topics.
B.Tech in CSE
Under this program, you will be studying CSE subjects like databases, operating systems, networks, computer architecture, etc. IIT Hyderabad’s fractal system will let you take AI subjects and work on areas of ML and AI as well. So you are free to choose your research area.
Ultimately, you should determine what interests you and then only decide what to take. It’s better to research everything before making the final decision.
Artificial Intelligence is a specialization that is expected to be in high demand in the near future and its scope is yet to be determined. I don’t think it’s safe to go for a newly launched field that too from a new IIT. The program and institution both lack the necessary credibility. I would recommend you go for a general branch at a new IIT, a specialization like AI from a well-reputed institute. There are many factors one should consider like faculty, subject content, etc before going for a new specialization.
Mechanical at IIT Guwahati on the other hand is a very safe choice considering the high credibility of the long-standing Institute.

IIT Guwahati should never be your first choice and IIT Hyderabad is a much better option.
My brother was in a similar dilemma last year when he had to choose between MnC IIT Guwahati and CSE IIT Indore. Eventually, he went for IIT Indore CSE. The main reason he decided against going for the MnC program was his lack of interest in Math. And when we talk about Math at IIT, trust me when I say it’s at another level. It’s purely proof-based and high-level Math that can be handled only by true Math lovers. The academic workload is also high with 60% Math and 40% CS courses.
Now, here are a few points that might convince you to join IIT Indore instead
Overall, IIT Indore CSE is a much better choice than MnC IIT Guwahati considering the work of and job opportunities.
Thapar University does not release official data for branch-wise placements so I contacted a friend who is currently pursuing a COE course there.
As per the information he shared, the recent highest package received by a COE student at Thapar University stood at INR 39 lakhs while the average package of COE was in the range of 10-12 lakhs. The placement percentage is usually around 100% although only the most skilled ones receive packages above 10-15 LPA.
The kind of companies and the packages they offer depend on your soft and technical skills. Here, you have to work hard to get offers from the best companies else you will remain unplaced. It’s better to start preparing for the interviews in the 3rd year itself when you have to sit for internships.
As opposed to the preconceived notion, not every college in Pune is visited by the best companies. In fact, good companies can go to a great college even if it’s located in the middle of nowhere. That being said, WCE Sani is a better choice than VIT Pune in terms of the opportunities it offers.

Without any second thoughts, CSE at MNIT Jaipur seems to be a far better option than CSE at NIT Rourkela. Although many rankings claim otherwise, it's a well-known fact that these rankings are forged and shouldn't be the determining factor.
Although individual opinions may vary, I consider CSE at MNIT Jaipur a more appropriate choice than NIT Rourkela.
However, this is simply a popular trend, and you don't have to follow it. It is best to make a decision based on your individual preferences.
Doing something that interests you is considerably superior in the long run to doing something you dislike solely for money since, after a few years, money no longer motivates you.
