- Nutrition, an area of health science, studies human metabolism as it relates to nutrition. This major provides an interdisciplinary curriculum with courses in nutrition, food science, food systems management, lifestyle, and health, with supporting courses in chemistry, social science, and management. Students in this major must complete one of two concentrations, Community Nutrition or Dietetics, which fulfills the Accreditation Council for Education in Nutrition and Dietetics (ACEND) accredited Didactic Dietetics Program requirements.
- In addition to a core of courses in health, exercise science, and sport/leisure, Miami's program in nutrition and dietetics includes courses in food science, nutrition, exercise, and health, with supporting courses in natural science, social science, and management. Students can also choose courses for a special emphasis, such as sports nutrition or gerontology (the study of aging), or to strengthen an area of special interest, such as business or science.
- The Dietetics program concentration also fulfills the didactic portion of the requirements needed to become a registered dietician and a member of the Academy of Nutrition and Dietetics (AND). To become a registered dietician, students must complete an AND-approved clinical experience following graduation. These clinical, usually lasting 10–12 months, are offered by healthcare facilities or educational institutions.
